Citrus Wild Pork Roast or Ham

Start with a smoker( you can use a bbq grill or oven heat has to be low) and get it going no need to add any smoke flavors.

2nd we will make the sauce for your pork and you will need

4 oranges
4 limes
4 lemons
1 whole clove of garlic
1 sweet onion
salt
pepper
(i also like 1 or 2 hot peppers but you can leave them out)

cut all of your citrus in 1/4s and juice into a bowl donot throw away the rinds .

with what pulp stayed on the rinds cut these into 1/2 inch by 1 inch strips also cut your garlic and onions into same size peices.

next cut 1 inch holes all over your pork and fill with one piece of of any of the slices you just made( but try not to use the same ones next to each other)

after you are done with that salt and pepper to taste and put in smoker

slap on your citrus juice once a hour and turn you meat every 2nd hour.

as for time to cook I like 30 minutes per pound so a 16 pound ham is 8 hours.

Once done remove and slice taking out the rind(please don't eat the rinds that will make the worst taste you have ever had in your mouth) and tell any company eating with you remove the rind if they find any.

the citrus will help with any gamey taste your pork might have.
