blackened walleye

thought some of you that fish might like this one its an favorite river bank recipe you can use crappie walleye sauger or what ever fish you like best just do not do this indoors it will smoke up your house

youll need boneless fillets
cajun blacken seasoning
1 stick of butter
one empty and washed pork and bean can
a plate
cast iron skillet
and a source of heat bbq grill or a bag of lit charcoal on a river bank works well just make a fire ring out of rock and fill with charcoal and light
next place the skillet on the heat source and let it get hot i mean hot
place the can on the skillet with the butter in side and let melt
once melted remove from the skillet dip each fillet in the butter and place on the plate and shake theblacken on both sides of each fillet the more the better
place the fillets in the skillet youll notice them to start to draw let cook about a minute and flip total cooking time will vary between a minute to two minutes a side youll know when there done theyll fall to pieces and with this method the fish will not stick to the skillet and is not greasy
this can all so be done with lemon pepper and can be done with boneless chicken breast hope you enjoy this quick shore lunch recipe
