Pork Butt on UDS

Bought a pork butt monday.
Injected it with this mixture.
Cup of apple juice.
3 Tbs. of cider vinegar.
ts. granulated garlic
ts. onion powder.
Dusted it with
Granulated Garlic.
Ground coriander.
Wrapped and put in fridge for the nite.
Fired up UDS next am.
Lump charcoal and wild cherry.
at 10:30 it was running 250.
Put in pork and a beer can chicken.
Watched out the window.
UDS ran steady 250 to 280.
That was with a temp of 18, windy and snowing hard.
Checked temp of pork several times.
At almost 6 hours pork was well done.
Had a taste for pulled pork for a good while.
Got my fix last nite.
Better half said next time to do two beer can chickens.
So you know what i will be smoking next time.
