If you asked the service dog in the video what he would rather have, the reward of good dog and pat a few times, from the handler or the bite. He would have chosen the bite. It's a great relief for the dog to sink his teeth into the prize and it's more rewarding than anything else.
The same goes with hounds. For the hound, nothing is more rewarding. No hesitation, just do whatever it takes go get the bite after the chase. If a service dog hesitates, he's gone, you can't teach that, it comes from breeding.
