Selling dogs is tricky even when you are honest. I agree that the best way to sell or buy a dog is under the tree.
The problem is, that's not always the easiest or most convenient way to buy or sell. What do you do if you find the dog you've been looking for, and it's halfway across the country...? Do you keep looking for the magic dog close to home so you can hunt with it, and possibly miss out on a dog that sounded... GREAT?
I guess it has a lot to do with price... How much can you risk to LOOSE. What are the guarantees? With shipping as high as it is now, it's a great investment to buy a dog from very far away, no matter the price because the shipping adds some $$ to the deal.
I dont believe you can't trust people anymore, and I have had several deals in the past that prove you can. I have also heard about some damn tough ones that make a guy wonder.
I think if you are looking for a good hound, you need to look for a good reference or 5 and also try to reduce the risks as much as you can... Hunt with the dog if at all possible and if you can, buy from friends. Be careful and take as much caution as you would with anything else.
