I really dont think they follow a pattern. I have had hogs run for miles, in a straight line, and i have had them make one big circle, So it kinda hard to say.
Hogs will take cover, goin to the roughist place they can find, to shake your dogs. I have had hogs use the brush to there advantage sevaral time., and it works for them.
Last year i had a hog that seems to have had alot of dogs on. She wasnt very big, maybe about 180#, but very rank!!!! She knew how to spin out of a bay and keep moving, she did this over and over till the dogs finally held her up against a fallen tree.
Another case of hog movment was about 4 years ago. I was into a group of about 8 sows and a bunch of little ones. I had killed a couple out of this group, in one weekends time!. On the 3rd day, these had moved plum out of the country, and i tracked there movement in the snow. The crossed a local river, about 5 times, and over 8 miles!!!! When i finally cought up to them on the 4th day, i was certain, it was them cause i had been after a blond sow about 250# in this group, i was shocked how far they had moved, and id say that it wasnt unfamiliar country to them!.
Hope some of this help, and get you a dog that know how to head a hog off. There are lots of dogs that can run with them, but if you dont have a dog that know how to head them off and stop them, there goin to keep moving.

it depends if we get on a big lone boar he will run straight out most times. a big group will usually bust up and circle back.

one of the things that Some of the big boars have learned is that they can run from the dogs and lead them into a group of smaller hogs and shake the dogs. I dont know how many times the dogs have stopped and bayed a big ole boar and the bay would break and after a long race you hear a solid bay followed shortly by squeling.

those big lone boars are very tuff and smart. Round here they are a special breed of runners that wont stop. I have seen a boar running with his nuts in a dogs mouth 5 feet behind him only attached by spahgetti.

3 ways to catch a runner
1. you have to put enough pressure on him make him want to stop and fight
2. just run his a$$ until he cant run anymore( when this happens you usually end up going for a swim since he tries to cool off.)
3. my prefered method is have a couple of RCD that stop him from breaking in the first place. kinda hard to get out of the country with 2 dogs as earrings. breaks their spirit pretty quick.

also one quick note Most hogs will always run into the wind. so if you have a small place you can kinda guess where he is going to go and have a bulldog ambush set up.

Ive had it go all different ways. Ive seen a herd of 20 basically circle the wagons and make a stand as a whole. Ive see herds stand 100 feet away and watch the dogs bay a single. Once the hog is dead the dogs will bay another and the process will repeat itself over and over. Herds im my experience will scatter and try to regroup in the direction from which they came.

Singles will usually try to stay on a path that they are familiar with. If not usually they will always end up going downhill and into a drainage. Ive had hogs in the thick brush do the 100 yard dash to get away from the dogs and stand still in a brush patch hoping the dogs wont refind them.

The only thing that i suggest is that if the pigs are just moving into your area is that they may not be dog smart YET. let a couple yahoos with dogs run them and not catch them and they will become very educated quick. Its not natural for the pig to turn and run the way they do now at first they will stand and fight. When guys get out and run with dogs that cant do either of the 3 things i said you WILL educate them. If you ever get on that pig again he will just run. Then they pass along to the babies that if they run hard and long enough thats their best chance of survival. When that happens those guys with dogs that cant get either of the 3 things done will eventually stop hunting b/c they cant catch anything and leave you with alot of long races. JMHO
