Bear Hunters

I see a lot of Bears killed ,my question is do you guys save the meat? [you eat it or feed it to your dogs],west of Happy Camp we use to kill a couple of bears for food,but not when the salmon was running, he would stink so bad at the tree like dead fish. we would wait to late fall and go to a oak grove and strike one eating acrons and he was good to eat.
I can see why they are a shortage in lions in Mt., Utah every body has killed one.

I only hunt Happy Camp and yes, we eat the meat from every bear we take. Even though the area i hunt is close to the river, the bears main food is the acorns. Never had a fishy smellin bear that i can recall. Last few years we've been having the meat done up into pepperoni sticks and such, but this year i kept out some steaks and some stew meat. DELICIOUS!!!!

I remember the year of 89 that was a good salmon run and every where you stepped in the Klamath you were stepping on a dead salmon,
We fished of day and bear hunted in the evenings and night, treed several bears that week and most stunk because you could see them in the river eating dead salmon. now this was 20 miles down river from Trinty
and Parsons store .Hopi Indian Rev.

eat everyone we kill. Cut them up just like venision steaks,chops, burger, and stir fry. Just make sure we get the fat off.

I have had my share of bear steaks. Now I make everything into a mild breakfast sausage and eat it for dinner and breakfast. I love the pepper stix, they are better than venison, but yikes!! I don't like what they charge you to make them!!
All the meat goes in my freezer, not to the dogs.

We use to fish until about 1 pm and go to the house and take a very sharp knife and slice that ham real thin roll it in flour and put it in a hot Iron skillet and boy was that good, me and my indian friend could eat two big skillets full.
Lord I miss that.

I am not from out west or hunt the happy camp...BUT....... try canning the meat...the very best I have ever had9yes just like they did in the old days)

OK Gator has got this right. I've read all this and you guys need to listen this man. My wife won't eat beef/pork but will open a can of bear meat and eat it cold right out of the can. You won't find anyone here most likely that doesn't can their meat. We take canners up north with us as well. Its the only way trust one of us. Can't believe nobody else is hollering this but the best I mean the very best part of a bear is the liver. Flour it, salt & pepper, peppers and onions and fry it. Cake of corn bread and some pinto beans. I'm hungry now Later.

I do agree with the liver being the best. My wife won't eat venision heart or liver. But bear she can't get enough

Canned bear meat.. Ah'B'Damded. I would love to try it. Ankle or Gator, you got a recipe, or is it pretty standard like canning any meat??

The canned is great for anything. Soup, BBQ, or right out of the Jar. My favorite is a plain ol crock pot roast...potatoes onions, carrots, Onion soup mix and a little salt and pepper. Put it on when you go to work and eat it for the next 3 days.
I can't stand the thought of eating the liver out of anything. The liver is the Dumpster of the body and bear eat some nasty stuff. The dogs really like it. I'll stick to the meat, but you all enjoy.

I can in quart Jars, fill with bear meat ( fat removed) and add 1/2 teaspoon of salt.
Put on lid hand tight and put in canner for 90 minutes at 10 pounds of pressure.
things you can add to jars... taters....garlic...onion....pepper .....jerk sauce...
or anything that you like your meat to taste like.
One warning once the jars settle it looks like HELL but taste great and ...DONT COOK the meat a second time just reheat.... it will get tougher than shoe leather.
for people that live over 2200 feet above sea level you have to add 10 minutes to canning time
and you can do this with any meat

Dead on Gator. You beat me. Only things I would add is that is canning/pickling salt for the rookies and I add a little like a tablespoon of white vinegar to the water in the canner. If canning indoors you'll think me for it. It also will keep your canner clean and unstained. Its just me and the wife so we use a lot of pints and quarts. I give the quarts away and spread them amongst the help. Usually I back my venison off to 75 mins. but still at ten pounds. Hog meat is probably the best out of the can, wild or domestic. We can alot of groundhogs also. Bones and all. Their pretty hard to beat too.
Another good part of the bear is the ribs off a decent sized one. We save them up and have a couple bar-b-q's a year. We usually have a group get together while the ramps are in and eat ribs. I would have to ask my buddy how hes doing them if anyone is interested.

dang AE sounds like I need to stay more than a day next time I am there, I cant belive you were holding out on me like that. All I got was storebought pizza last time

but then again its probably a good thing you dident feed me any of that cause I probably woulda never left

canned venison, that sounds good think i'll wonder down the cellar and grab a quart or two
