Soup Beans

1st of all PoorBoy Rocks he has the best recipes on here thats why it is named after him.
And all in good fun everytime he post something if I can find the Southern Style of it I will repost it.
Black Eye Peas are a great Southern custom on New Years Eve and served mostly as a side dish.

But down here you cant step in any roadside Cafe or diner without seeing Soup Beans and Corn Bread as a whole meal.

One Bag Pinto Beans or Canberry Beans( also knowen as October Beans)yes their is a taste diffence if you like as we do mix half and half

1/2 med onion
8 oz of side meat, fatback, or streaked meat,ham hock or neck bone
salt
pepper


1st you have to LOOK the beans ...check the bag of beans sliding thru your fingers to check for rocks and pebbles and small stones.

2nd totally optional Soak the beans in water for 4 to 8 hrs this is ( i couldnt have made this up if I wanted to) to reduce the amount of farts the beans give you.

3rd add beans and ham and 1/2 a med onion ( you can chop it or leave it in half) in a crock pot and cover with water (one cup of beans need about 3 cups of water)

salt and pepper to taste cook for atleast 8 hrs and make sure the water never dips below the level of the beans.

serve with corn bread and fried taters O hell that will stick in your Craw and too your ribs.


add to your taste a hot pepper

or chow-chow ( a canned hot relish) or sweet pickles or bread and butter pickles

Heres one for you.
Took the better half out to eat to a new place yesterday.
Ham and beans. Navy beans.
Cornbread. ( I think Jiffy Mix.)
Fried potato. ( I think they boiled the potato first then fried them).

The country people around here get apple cider vinegar for their beans, city people get white vinegar. I think the owner was Italian. No vinegar, but 3 kinds of hot sauce.

Good Comfort food.

Oh a question.
Onions and celery both contain high amounts of sulfur.
Why will celery take the wind out of beans?
I always put it in any kind of beans i make.

Jerry,

I have asked a couple of the Ol Timers why to soak the beans and would anything else work to take the gas out and 2 of them said it was just a Old wifes tale the others wernt sure just that it worked
