why do big toms tend to bay up?

More often than not i have been baying up big tom rather than tree.Deep snow or no snow.Why is that?
i have noticed that they will stay ahead of the dogs and hunker down,when the dogs catch up,they bolt,in good snow you will eventually catch them,in poor snow,if you cant wear them down,you will be behind and and a chance to get further behind and the cat get away.
good chance that some of these cats have been dogged so much they know some of the old tricks that worked in the past,with good snow now,one mistake and pretty fair dogs and they are done.
