Wet and Dry Ribs

Peal membrane from inside of ribs.
Rub.
1/4 cup paprika
1 tablespoon firmly packed brown sugar
1 tablespoon granulated sugar
2 teaspoons salt
1 teaspoon celery seed
1 teaspoon pepper
1 teaspoon cayenne pepper
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder

combine all and rub on nite before.

Mop

1/2 white onion
3 cloves garlic
3 tablespoons olive oil
1 2/3 cups ketchup
1/2 cup white vinegar
1/3 cup brown sugar
1/3 cup Worcestershire sauce
2 teaspoons chili powder
1/4 teaspoon cayenne pepper

1. Put olive oil in a sauce pan on medium heat and cook onion and garlic until they are soft.
2. Then add the white vinegar, ketchup, brown sugar, worcestershire sauce, chili powder, and cayenne pepper.
3. Let this simmer for 30 minutes.

I processed onion, garlic and oil in food processor till smooth.
cooked and cooled.

Change of plans.
Planned to smoke all day the 4th.
Cookout with family at 1:30

Cooked in oven 2 hours at 350 with rub freshly applied.
mopped on sauce and cooked 1 more hour at 250.
Turned off oven and will cook 1 more hour tomorrow.

Will post the outcome.

Meat falling off bone.
Better half did not care for it.
Her kids ate most of it.

I will change the rub or mop one next time.

Might just add more brown sugar to mop.
Was just a bit tart.
