Well here in Eastern Tenn the gardens are going strong and their is fresh veggies everywhere.
One of my favorites to make is grilled squash and zuchenni( spelled wrong you all know the green squash)
All you need is
3 crooked squash
3 zuchenni
10 tommy toes tomatoes
1/2 a onion
butter
garlic
salt
pepper
tin foil
I get up and know we are cooking this ,so I cut up the squash into 1/4 inch slices and the onions into 1/8 inch circles leave the tommy toes whole and put them in a plastic bowl witha lid. Then I melt my butter with the garlic in it on the stove and pour it over the squash and salt and pepper. All of this I leave in the frigde until I am ready for it on the grill.I take my tin foil and make me a boat out of it and put it right on the grill, add the veggies into the boat and in about 5-10 minutes they are hot enough to serve.
Don't worry if some stick on the bottom my wife says those that get blackened are the very best...not sure why.
Hope you all enjoy.
